// Rösti (Swiss Style Hash Brown)

Ingredients – 900 g Potatoes ; oil, 2 ts butter ; salt, pepper.

Preparation – Boil the potatoes the day before (do not overcook them !). Peal the cold potatoes. Grate the potatoes into strips. Heat the oil in a pan. Add the potatoes. Season with salt and pepper. Melt some butter in the edges. Press the potatoes to a cake. Roast the cake on each side for about 10 min. or until golden brown. Add some butter at top before serving.

// Zurich Style Chopped Veal

Ingredients – 450 g thinly chopped veal ; 300 g chopped veal kidney ; 80 g minced onion ; 150 g minced fresh mushrooms (champignons or other) ; 1 dl white wine ; 2 dl cream ; 1 cube of clear soup ; oil ; 1 ts chopped parsley ; salt and pepper.

Preparation – Grill the meat and kidneys quickly at high temperature with some oil. Remove from fire and keep warm. Roast the onions and mushrooms. Season with salt and pepper. Add the white wine and dissolve the clear soup cube in it. Add the cream and steer well. In case the sauce is too liquid, add some corn starch (Maizena). Add the meat and warm it briefly without boiling. Add the chopped parsley.
