Serves 4 people
Ingredients – 1-2 litres of water ; 500 g polenta “dorata” (mediumly ground yellow cornmeal) ; 250 g “bramata”, (coarsly ground cornmeal) ; Salt.
Preparation – Bring the water to boil in a large pot. Salt it. Gradually add the cornmeal while stirring. Simmer gently for 1 to 1½ hour, stirring continuously.
// Baked Rabbit
Ingredients – 1 rabbit of 2 kg ; 1 carott, sliced ; 1 celery stalk, chopped ; 1 leek, chopped ; 1 clove of garlic, cut lengthwise in 2 ; 1 sliced onion, 2-3 fresh rosemary stalks ; 2 basil leaves ; ½ litre red wine (Merlot) ; 1 tbsp oil, salt & pepper.
Preparation – Cut the rabbit into pieces, wash and dry them. Rub the pieces well with pepper. Heat the oil in a pan on a medium fire, add the oinions and the meat. Add the garlic and the rosemary. Brown the meat on all side. When the meat has a toasted color, add the chopped vegetables, the basil and the wine. Only at this point, salt to taste. Allow to evaporate for 5-10 min. Cover and simmer on a very low fire for approx. ½ hour (till the meat is cooked). Transfer into an ovenproof dish and cook in the preheated oven at 180°C (360°F) for approx. 1 hour.
